Good Friday Brunch and Giveaway

March is National Nutrition MonthIt is a great time to reevaluate the foods you feed your family, so you can feel confident you are feeding your family nutritious foods to help them grow.

Did you know that all eggs are not created equal? When compared to ordinary eggs, Eggland’s Best eggs contain:

·         10 times more vitamin E
·         Double the amount of omega-3’s
·         Twice the amount of vitamin D
·         3 times more vitamin B12
·         25% less saturated fat
·         38% more lutein

Since everyone was home today, I decided today would be a great day to have brunch.  I prepared my menu before going shopping and then decorated my table with a kid friendly Easter tablescape.  The kids were excited to see the table when they got up this morning.



Brunch Menu
Breakfast Pizza
Crock Pot French Toast
Fresh Fruit
Orange Juice 

Breakfast Pizza 
1 Can - Crescent Rolls
1 lb. Sausage
1-1/2 Cups of Shredded Cheddar Cheese
1-1/2 Cups of Monterey Jack Cheese 
6 Eggs 
1/2 Cup of Chopped Onion
1/2 Cup of Chopped Green Pepper
Dash of pepper 
1/2 Cup of Milk 

Preheat oven to 375°. Crumble, cook and drain 1 lb. of sausage.  Chop 1/2 cup of onion and 1/2 cup of green pepper.  Whisk eggs, dash of pepper and milk together.  Roll out crescent rolls in a 9 x 13 cookie sheet. Evenly arrange crumbled sausage on top of the crescent rollsAdd cheddar cheese, Monterey Jack cheese, onion and green pepper.  Pour egg mixture on top.  Bake at 375° for 8-10 minutes until egg mixture is cooked.


Crockpot French Toast 
1/2 loaf of Bread  = broken in half
6 Eggs
2 Cups Milk 
1 tsp Cinnamon
1 tbsp Light Brown Sugar 
1 tsp Vanilla


Turn crock pot on low and spray inside with cooking spray.  Whisk together eggs, milk, cinnamon, light brown sugar, and vanilla.  Dip each piece of bread in egg mixture and place in crock pot.  Pour remaining mixture over and cook 6-8 hours.  Serve with warm syrup.  (It took 7.5 hours for mine too cook.  Cooking time varies depending on your crock pot.) Remove lid and cook an additional 15 minutes so the top can brown.
