Christmas is 2 weeks from today. Can you believe it?? I am so far behind on my shopping. Since someone in my house was sick for 5 during November, I wasn't able to do any shopping. I plan on making a huge dent in it this weekend. I have my list and my coupons and I'm ready to hit the stores.

We spent most of Sunday decorating. For some reason, I just couldn't get in the holiday spirit but I knew it had to be done. Once I got started I couldn't stop. I ended up putting up 3 Christmas trees (1 large, 2 small). Below is a few of our decorations.

TASTY TUESDAY - PECAN TOFFEE FUDGE

Ingredients:

1 tsp butter
1 package (8oz.) cream cheese, softened
3-34 cups confectioners' sugar
6 ounces unsweetened chocolate, melted and cooled
1/4 tsp almond extract
dash of salt
1/4 cup coarsely chopped pecans
1/4 cup English toffee bits



Directions:
Line a 9" square pan with foil and grease the foil with butter; set aside. In a large bowl, beat cream cheese until fluffy. Gradually beat in confectioner's sugar. Add the melted chocolate, extract and salt; mix well. Stir in pecans and toffee bits. Spread into prepared pan. Cover and refrigerate overnight or until firm. Using foil, lift fudge out of pan. Gently peel off foil; cute fudge into 1 inch squares. Store in an airtight container in the refrigerator.


Yields - 2-1/2 lbs.
