My Pinterest Attempt Series - Breakfast Ham Cups

I am constantly telling my husband that I so tired of eating the same things for breakfast.  I am constantly trying to come up with new things to have.st.  I saw this on Pinterest and knew I had to try them. 

Ingredients: (makes 12 cups)

24 Slices - Budding Ham
8 - Eggs
1/2 Cup of Cheese (whatever you prefer, I used mozzarella and cheddar)


Optional Ingredients:
Green Onion
Green Pepper
Mushrooms



















Directions:

Preheat your oven to 350°.  Spray your muffin pan with cooking spray.  Line each cup with 2 thinly sliced pieces ham.  Whisk eggs together and any additional ingredients you prefer.  Fill each cup with egg mixture.  Add 2 tablespoons of cheese to each cup.  Bake for 25 minutes or until a toothpick inserted comes out clean.  If it starts to brown to quickly add aluminum foil on top.  I did add chopped parsley to each one after baking.

My Pinterest Attempt Series - Shamrock Pretzel Bites

I saw these on Pinterest and knew I wanted to make them.  I already everything I needed except for the Rolos so I used Hershey kisses instead.  They turned out great.  You definitely can't eat just one.  So quick and simple to make.  A perfect treat for St. Patrick's Day!

Ingredients:
pretzels
chocolate kisses
green chocolate candy



Directions:

Preheat oven to 200 .  Arrange pretzels into shamrocks with a chocolate kiss in the middle.  Place in the oven for 5-6 minutes for the chocolate kiss to become soft.   Remove from oven and place chocolate candy in the middle of the kiss and push down.  Place in the refrigerator to cool and harden for 15 minutes.

My Pinterest Attempt Series - Buffalo Chicken Dip

Who doesn't love a good dip?  I know I do.  I love all kinds.  Anything you can dip with chips, vegetables, or crackers is perfect for me.  I also love chicken wings so I thought this would be perfect to try.  I wasn't let down.  Once you take a bite, you can't stop.  It was great.

Ingredients:
2 8 oz. Packages of Cream Cheese (Room Temperature)
1 Cup of Ranch Dressing
1/3 cup of Texas Pete
2 cups of Shredded Cheddar Cheese
2 Cans of Can Chunk Chicken (Drained)

Directions:
Preheat oven to 350.  Mix together all ingredients except for 1/2 cup of shredded cheddar cheese.  Spread mixure into a 8 x 8 baking dish.  Bake at 350 for 20 minutes.  Remove from oven and add remaining cheese on top.  Bake an additional 5 minutes or until cheese is completely melted.  Serve with corn chips, crackers, or tortilla chips.

My Pinterest Attempt Series - Veggie Cups

I love Pinterest!  While watching TV, I am usually browsing Pinterest.  I have so many boards of amazing neat pins.  Well its time to attempt to do some of those amazing pins.  I hope to do a couple a month. 

My 1st attempt was Veggie Cups!

I decided to make these on Super Bowl Sunday.  We had our own Super Bowl party at home.  We had our mouth watering fatty foods but I also wanted to make something healthy to go along with it.  I am a true believer that sometimes the way you present a food item to a child will make a difference in whether or not they will eat it. 

Veggie cups require absolutely no talent at all.   My kids loved them.  They loved that they had their own veggie cup and I even got asked for refills on their veggies.

Any vegetables will work but here is what I used.

- cucumbers
- cherry tomatoes
- carrots
- zucchini
