Tasty Tuesday - Zucchini Pizza Boats

This is a great recipe to have on hand if you have an abundant amount zucchini from your garden this year.


Ingredients:

2 - Medium Size Zucchinis

1 Jar of Pizza Sauce

1 Package of Pepperoni

2 Cups of Mozzarella Cheese


You can add other items if you prefer - sausage, mushrooms, onions.


Directions:

1. Preheat oven to 375°.

2. Cut zucchinis in half.  Scoop out the center of the zucchinis.

3. Bake zucchinis for 8-10 minutes and remove from oven.

4. Layer zucchinis with pizza sauce, pepperoni, cheese and any other ingredients you prefer.

5. Bake for an additional 12-15 minutes until zucchini is tender and cheese is melted.


Serve with a salad and you have a complete meal.  Looking forward to making them again.
